The secret to the best roasted potatoes 🥔🔥 ⠀ This is the only recipe for roasted potatoes you’ll ever need! Boiling the potatoes with baking soda helps breaking down the pectin, creating a rough surface and thus more crispiness 🔥 Full credits for the method go to Kenji Lopez who has an in-depth article about the science behind this recipe on his blog serious eats! ⠀ RECIPE - about 2 kg potatoes - salt - 1/2 tsp baking soda - 4 tbsp oil (neutral vegetable oil or olive oil) - 1 sprig rosemary - 3 garlic cloves ⠀ ❶ Preheat oven to 230°C/450°F. ❷ To a large pot add 3 liters of water, salt and baking soda and bring to a boil. ❸ Peel and chop potatoes, then boil for 10-15 minutes until fork tender. ❹ Strain the potatoes, then shake to roughen the surface. ❺ Infuse the oil with garlic and rosemary. Sweet potatoes but, hear me out - in a STACK
It hasn’t been long since I uploaded my Cheesy Bacon Potato Stacks (14 posts back) so I thought I’d share with you the sister recipe - sweet potato stacks!! Enjoy 😛 Chris x GARLIC BUTTER SWEET POTATO STACKS | Makes 12 INGREDIENTS 1.2kg / 2.6lb Sweet Potatoes* 6 tbsp / 90g Unsalted Butter, melted 3 large cloves of Garlic, finely grated 1 tbsp very finely diced Fresh Rosemary 1 tsp Salt 1/2 tsp Black Pepper 45g / 1.5oz Parmesan** METHOD 1️⃣Pre-heat oven to 180C/350F. 2️⃣Peel the potatoes & slice off both ends. If the potatoes are wider than the width of the muffin tray cups, use the peeler to shave them into cylinders of the same size. Thinly slice into rounds (approx 3mm/1/8"). 3️⃣Brush the inside of the muffin tray with melted butter, then combine the remaining butter in a large mixing bowl with the rosemary, garlic, salt & pepper. Toss in the potato slices until well coated, then place one slice in each cup in the tray.
4️⃣Toss remaining slices with parmesan until well coated, then stack piles in each cup in the tray. Use a brush to collect any remaining butter/parmesan in the bowl and brush it over the stacks (if the leftover parmesan is a little clumpy/dry just loosen it up with a dash of oil). Cover with foil & bake for 35mins. 5️⃣Remove foil, increase the oven temp to 200C/400F & bake for a further 15mins, or until lightly charred & soft right through the centre (check with a butter knife). Use a spoon to carefully scoop out the stacks and drizzle/brush with any butter in the tin. Enjoy! *The potato slices should weigh 750g/1.6lb, so depending on the size of your potatoes and how much you need to shave off, the total weight might be a little more than 1.2kg/2.6lb. **Try & get the fresh ‘dusty’ stuff (not the non-fresh stuff). If you've got a block of parmesan, use the most coarse side of a box grater to replicate the dusty texture. I have made these without parmesan but chose to add it because it gives them a deeper savoury/salty flavour, which is great to balance the sweetness of the potatoes. Having said that you could make without. The garlic flavour will be more prominent though & consider adding 1/4tsp salt!
